It’s me, you’re old pal the Easter Bunny, reporting to you live a week before Easter from my kitchen table with a cup of cold coffee that I have already reheated 4 times. My two tiny roommates have been yelling at me since the crack of dawn, but I’ve stolen a few moments to myself to help you get prepped for Easter, which is next week! Easter is a busy job—there are eggs to hide, baskets to stuff, family coming over, food to cook, but some-bunny’s gotta do it! (Get the bunny pun?) Sometime between now and next Sunday, this bunny will search my kids’ closets for the baskets and eggs from last year, add to my Amazon cart the things we need to fill said baskets and the eggs for the egg hunt at preschool, and and convince my husband to help me stuff both the baskets and the eggs. If you didn’t know, the Easter Bunny is fueled by red wine, Starburst jelly beans and Cadbury caramel eggs (the best ones imo), because the bunny obviously bought extra to snack on while stuffing Easter baskets. I thought I’d share what’s on the Easter Bunny’s docket in our house in case you wanted to include any in your own house’s celebrations. For some reason, I always associate deviled eggs with Easter, so these pimento cheese deviled eggs are the ones you have to make. Speaking of pimento cheese, it’s a Spring staple in the South, so why not whip up a batch of pimento cheese that you can add to your eggs, stuff in some jalapeño poppers, and snack on as well! Another classic Easter recipe is carrot cake; and my favorite recipe is the one my friend Brian shared on the blog a few years ago. Transitioning from one Easter classic to the next, what is the bunny putting in our kids’ baskets this year? We are using this opportunity to give the kids stuff they actually need rather than plastic junk that will be thrown all over our house by the next day. We are going with new socks, swimsuits, a couple books, and a Tonie for each of their Tonie boxes. And candy; but not too much to make them crazy. Last thing on the bunny’s list is the eggs for our preschool’s egg hunt. Our school has specifications and prefers no snacks, so we decided on mini Koosh balls this year and I got the multipack on Amazon for the eggs for both kids’ classes. And last but not least on my list of Easter essentials is egg dying. We are skipping that this year in lieu of an egg decorating spinner which looks fun and a lot less messy.
